Ingredients
- 1 lb steak
Marinade
- ¼ cup olive oil
- ¼ cup water
- 1 teaspoon chili powder
- 2 teaspoons cumin
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 1 teaspoon paprika
- ¼ teaspoon cayenne
- 1 teaspoon salt
Corn Dip
- 4 oz cream cheese
- ¼ cup sour cream
- 2 Tablespoons mayo
- 1 cup shredded pepper jack cheese
- ½ cup shredded cheddar cheese
- 1 Tablespoon sriracha
- 1 cup corn
- 2 Tablespoons chopped cilantro
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon chili powder
- ⅛ teaspoon cayenne powder
- ¼ teaspoon salt
- ⅛ teaspoon paprika
For the Tacos

Instructions
- Add the olive oil, water and marinade spices to a small bowl and whisk together.
- Place the steak in a medium size bowl and pour the marinade over the steak to coat the steak.
- Cover the bowl and allow the steak to marinate.
- Make the corn dip by adding the softened cream cheese, sour cream and mayo to a bowl.
- Use the hand mixer to mix the ingredients together.
- Add half of the pepper jack cheese, the cheddar cheese, corn, sriracha, cilantro and spices.
- Use a spoon to mix the ingredients together.
- Transfer the mixture to a baking dish.
- Top with the remaining pepper jack cheese.
- Cover the dish with foil.
- Preheat the grill, then place the marinated steak and corn dip on the grill to cook.
- Allow the corn dip to cook for 15-20 minutes at 350 degress and the steak to cook to your preference (we recommend using a meat thermometer).
- When the steak and corn dip are done, remove them from the grill.
- Cut the cooked steak into thin slices.
- Assemble the tacos by topping each tortilla with lettuce, corn dip, steak and cilantro before serving.
