Ingredients
- 20 ounces (or 1 bag) frozen tater tots
- 2 cups shredded cheddar cheese
- 1 16 oz can black beans, drained and rinsed
- 1 cup bbq pulled pork
- ½ cup salsa
- ½ cup corn
- 1 jalapeno, finely diced
- ¼ diced red onion
Instructions
- Preheat the oven to 425 degrees.
- Spread the tater tots our on the sheet pan.
- Place the sheet pan in the oven and cook the tater tots for 20 minutes or until slightly crispy.
- Remove the tater tots from the oven.
- Sprinkle two thirds of the cheese over the tater tots.
- Layer the black beans, salsa, bbq pulled pork, corn, jalapeno, and red onion on top of the cheese.
- Sprinkle the remaining cheese on top.
- Transfer the sheet pan back into the oven and cook for an additional 10-15 minutes or until the cheese is completely melted.
- Remove the totchos from the oven and allow to cool slightly before serving.
