Ingredients
Cupcake Batter
- 1 and ½ sticks butter, softened at room temperature
- 1.5 cups cane sugar
- 4 egg whites
- 1 cup milk
- 1 Tablespoon vanilla extract
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
Buttercream Frosting
- 2 sticks butter, softened at room temperature
- 1 teaspoon vanilla extract
- ¼ cup milk
- 6 cups powdered sugar
Instructions
- Preheat the oven to 350 degrees and place the cupcake liners into the cupcake pan.
- Add the softened butter and cane sugar to a bowl.
- Use the stand mixer or a hand mixer to cream the butter and sugar together.
- Add the egg whites, milk and vanilla extract to the bowl and mix to combine.
- Add the flour, baking power and salt into the bowl and mix to form a smooth batter.
- Use ¼ cup measuring cup to scoop the batter into the cupcake liners in the pan.
- Transfer the pan into the oven and bake for 20 minutes at 350 degrees.
- When the cupcakes are done baking, place a toothpick into the center of one cupcake to make sure it comes out clean before removing the pan from the oven.
- Allow the cupcakes to cool completely before decorating with frosting.
- Make the frosting by adding the softened butter to the bowl of a stand mixer and mix to cream the butter.
- Add 1 cup powdered sugar, 1 teaspoon vanilla extract and a small amount of the milk to the bowl and mix to combine.
- Continue to add the powdered sugar 1 cup at a time and a small amount of milk as you mix to create a creamy and smooth frosting.
- Scoop the frosting into a piping bag and decorate the cupcakes.
