Ingredients
The Crust
- 1 cup + 2 Tablespoons flour
- 1 stick butter, melted
- ¼ cup brown sugar
- ¼ cup cane sugar
- 1 teaspoon cinnamon
- 1 teaspoon honey
- ¼ teaspoon salt
The Topping
- 2 14oz-cans sweetened condensed milk
- ½ cup sour cream
- ½ cup lime juice
For Serving
- whipped cream
Instructions
- Preheat the oven to 325 degrees and line an 8x8 baking dish with parchment paper.
- In a medium size bowl, mix the crust ingredients together.
- Transfer the crust mixture to the 8x8 baking dish lined with parchment paper and spread the crust mixture out evenly to cover the bottom of the pan. Use your hands to press the crust into the bottom of the pan.
- Use a fork to poke holes throughout the top of the crust.
- Place the baking dish in the oven and bake for 25 minutes.
- Remove the pan from the oven when the crust is slightly golden brown and allow the crust to cool for at least 10 minutes.
- Increase the oven temperature to 375 degrees.
- While the crust cools, make the key lime topping.
- Add the lime juice, sweetened condensed milk and sour cream to a medium-size bowl and use a whisk to combine into a smooth and creamy mixture.
- Pour the key lime topping on top of the crust and spread it out evenly.
- Place the baking dish in the oven and bake for 10 minutes at 375 degrees.
- The top of the key lime topping will form small little bubbles and the middle will not jiggle when it is done baking.
- Remove the pan from the oven allow to cool for 10 minutes on the countertop.
- After 10 minutes, transfer the pan to the fridge to cool completely.
- When ready to serve, cut into 16 bars and top with whipped cream.
